Triple Chocolate Brownies

Rich brownies with dark, milk and white chocolate
Ingredients - Makes 24
  • 150 g unsalted butter, cubed
  • 220 g milk chocolate, roughly chopped
  • 120 g soft or granulated brown sugar
  • 3 large eggs
  • 160 g plain flour
  • 40 g cocoa powder
  • 100 g dark chocolate chips or roughly chopped pieces
  • 100 g white chocolate chips or roughly chopped pieces
  • 3 tbsp milk
  • 2 tsp orange zest, finely grated, optional
Steps
  1. Preheat oven to 180C/350F. Grease a shallow tray, at least 9"X9" size, and line with baking paper with two ends hanging out over the tray. This will make it easy to lift out the brownies from the tray
  2. Place the butter and milk chocolate in a heat-proof bowl. Place this bowl over a saucepan with simmering water and melt the butter and chocolate together while stirring occasionally. Set aside to cool
  3. In a large bowl, beat the eggs and sugar together until fluffy
  4. A {hand mixer} can be very useful here
  5. Sift the flour and cocoa powder together into this mixture and mix until just combined. Don't beat
  6. Mix in the orange zest, if using, and all the chocolate chips
  7. Thin the batter by mixing in 3 tbsp milk
  8. Pour the batter into the prepared tray and bake for 15-20 minutes or until an inserted toothpick comes out with just a few crumbs. Baking times can vary with oven type and size of tray
  9. Cool and cut into desired shapes and serve warm with a scoop of ice-cream
