Carribean Beans and Rice

A traditional Cuban dish of beans and rice
Ingredients - Serves 4-6
  • 1 large (or 300 g) onion, chopped
  • 1 large green capsicum (bell pepper), chopped
  • 2-3 cloves (or 6 g) of garlic, chopped
  • 3 medium-sized (or 300 g) tomatoes, chopped
  • 1X400g canned black beans or ½ cup dried black beans, soaked overnight and cooked separately
  • 1½ cups long-grain rice
  • 3 tbsp extra virgin olive oil
  • 3 cups water
  • Salt, to taste
Steps
  1. Heat the oil in a large saucepan. Fry the onions and capsicum till they are soft
  2. Add the garlic and tomatoes and cook till the tomatoes become mushy
  3. Drain the beans and add to the pan along with the rice and water. Season with salt and bring to a boil
  4. Cover and cook till the rice is done
  5. Serve warm
