Basic Fresh Tomato Sauce
Ingredients - Makes 4 cups
- 1 small onion, finely chopped, or grated
- 500 g tomatoes, chopped
- 2 cloves (about 5 g) of garlic, chopped
- 1 tsp dried oregano
- 1 tsp red chilli flakes (or dried red chillies, crushed), optional
- 1 tbsp granulated white or brown sugar
- 2 tbsp extra virgin olive oil or butter
- Salt, to taste
Steps
- Heat oil in a saucepan and fry onions and garlic until the onions are soft. Do not brown
- Add everything else and cook till the tomatoes are mushy
- Use immediately or store in an airtight container in the refrigerator for a couple of days
